Vegan Cobb Salad with Cilantro Dressing

Who doesn't like a salad!!! I love them and this is one of my favorites. It's sinfully delicious and as always really easy to make. You can add anything you like to this salad. This is just how I like it. 

Let's get started!!
1 avocado
a handful or about 3/4 cup of fresh cilantro
the juice of a lime
1 tbsp of apple cider vinegar
2 or 3 cloves of garlic
1 cup of vegan yogurt or sour cream (both work really well)
salt to taste if you like
plain plant milk if your dressing is to thick. Just a little until you reach the desired consistency

Throw everything except the milk into a blender and blend until smooth and creamy. Then add desired milk to thin out. Store any leftovers in the fridge in a air tight container for only 2 or 3 days.

The salad. You can add as much or as little of everything you like.
1 romaine heart
handful of spinach
organic corn
chopped cucumber
chopped tomato
black beans
chopped bell pepper
shredded carrot
crushed black bean chips
hemp seeds
