One of my favorite berry's is the blueberry. I like to pick tons of fresh berries and freeze them for smoothies, popsicles and things like quinoa bars. This recipe was actually inspired by some banana quinoa bars from Simply Quinoa. I didn't have any banana's today but wanted to try these. I am always looking for new ways to use quinoa and I thought, oh I bet these bars would be great with blueberries. And they are really good.
Here is what I used.
1 1/2 cups frozen blueberries
1 1/2 cups quick oats
1 cup cooked quinoa
1/3 cup coconut sugar
1 tsp baking powder
1 tsp cinnamon
1/2 tsp salt
2 flax eggs which is two tbsp ground flax 6 tbsp warm water
1 tbsp vanilla
Mix the flax and water first. The flax needs to absorb the water to become egg like and that will take a few minutes.
In a large bowl combine oats, quinoa, sugar, baking powder, cinnamon and salt.
In another bowl combine berries, vanilla and flax eggs. Pour over dry ingredients and stir until combined. Pour into a greased 8 X 8 pan and bake at 350 degrees for about 20 minutes.
