Learn to unlearn!!!

 I once heard someone say that. We have to learn to unlearn. I took that to heart and keep it tucked away in my noggin. For years we have been told meat and dairy is good for us. It's totally the opposite and learning to unlearn that is really hard for some people. Meat is not only bad for us but the torcher that animals go through just so selfish humans can eat them is horrifying to me. Meat is also cleaned with ammonia. That is completely disgusting to me. Dairy is a nightmare as well. Most of us have been told all of our lives to drink milk to get your calcium. WRONG!!! Not only are you taking milk away from a baby calf but consuming all of the animal milk has the opposite affect of what we've been told. It's acidic leaving your bones weak. All of that dairy as also been linked to allergies, acne, inflamation, digestive issues and cancer of course.

Vegan Quinoa Pizza Bites

These Vegan Quinoa Pizza Bites are so good. If you are vegan, or plant based or non consuming animal eaters and miss having pizza, try these. They really taste phenomenally like pizza. My 12 year old even likes them. There are tons of recipes out there for these but these are my favorite. 

You will need:
1 1/2 cups cooked quinoa
1/2 onion chopped finely
2 portabella mushrooms chopped finely
1/2 bell pepper chopped finely (I used red)
1 tbsp dried oregano
1/2 tsp salt (optional)
2 cloves garlic minced or chopped, however you like them
2 tbsp ground flax and 4 tbsp warm water (this is an egg replacement)
vegan mozzarella
Pizza sauce

Preheat oven 350 degrees.
In a small bowl, combine flax and warm water. Let it sit so the flax absorbs the water. 

In a large bowl, mix everything else except mozzarella in no particular order. Add flax eggs. You will need two oiled mini cupcake pans to bake these and I used a cookie scoop to put the mix in the pans. Kind of press them down so they are a litte condensed. Add just a touch of your favorite vegan mozzarella (mine is Daiya) on the top of each little bite. Bake for about 20 minutes. When cooled, add a little pizza sauce and enjoy. Makes 24 mini bites.

Blueberry Quinoa Bars

One of my favorite berry's is the blueberry. I like to pick tons of fresh berries and freeze them for smoothies, popsicles and things like quinoa bars. This recipe was actually inspired by some banana quinoa bars from Simply Quinoa. I didn't have any banana's today but wanted to try these. I am always looking for new ways to use quinoa and I thought, oh I bet these bars would be great with blueberries. And they are really good.

Here is what I used. 
1 1/2 cups frozen blueberries
1 1/2 cups quick oats
1 cup cooked quinoa
1/3 cup coconut sugar
1 tsp baking powder
1 tsp cinnamon
1/2 tsp salt
2 flax eggs which is two tbsp ground flax 6 tbsp warm water
1 tbsp vanilla

Mix the flax and water first. The flax needs to absorb the water to become egg like and that will take a few minutes.

In a large bowl combine oats, quinoa, sugar, baking powder, cinnamon and salt. 

In another bowl combine berries, vanilla and flax eggs. Pour over dry ingredients and stir until combined. Pour into a greased 8 X 8 pan and bake at 350 degrees for about 20 minutes.

Black Bean & Mushroom Burgers

I have been on a mission for quite some time for creating black bean burger. The problem is they are always to soft. I'm getting there though. Another proplem is my daughter has to like them too. That's the hardest part of all. If anyone has any tips, please let me know. So far my basic recipe is mushrooms, black beans, onion, one flax egg, braggs amino, and some bread crumbs. Don't ask for measurements please. Just kind of threw everthing together. And that was my dinner tonight.
