I have to admit when I first made this recipe, I didn't think much would come of it. Man was I wrong. There is so much flavor in these taco's it's hard to stop eating them.
The original recipe comes from The Pioneer Women, Ree Drummond. She actually used to be vegetarian then married a meat eater. There is always hope right, that someday she will again be at least a vegetarian.
The original recipe calls for romaine lettuce instead of tortilla's but I did not have any at the time of making the video. Both are equally delicious.
This recipe is also really inexpensive. My tofu was $2 which I get at Whole Foods, corn tortilla's $0.33, corn $1, green onion $1. Tamari and chili powder are a staple but if you don't already have them, they are not that expensive to buy.
Let's get to the recipe. Here is what you will need.
1 - 14oz pkg of extra firm tofu
2 tsps chili powder
2 tbsp tamari
1 1/2 cups corn
5 or 6 diced green onion
salt or adobo to taste
corn tortilla's or romaine lettuce leaves
squeeze of lime is really good too
In a fry pan, crumble the tofu and cook until golden crispy brown on medium heat. Took me about 15 minutes.
Add the chili powder and tamari. Combine really well.
Add the corn. Stir and heat through.
Add the green onion and stir again.
Serve on prepared corn tortilla's or romaine.
Top with tomato and a squeeze of lime and enjoy.
Even though The Pioneer Women is a meat eater, I feel obligated to share the original recipe. Be warned, there are references to meat in this post. Also, I did not use oil or vinegar like she did. Link to original recipe: http://thepioneerwoman.com/cooking/vegetarian-lettuce-wraps/
