My First Jackfruit

Look what I just got. Wholly jackfruit!!!! I have been looking for canned jackfruit but it seems the only way I can get it is to order it. My husband happened to see a fresh one at the local grocery store and bought it for me. It's about 25 pounds. From what I have already learned, it's not ripe enough to open yet. And if you open them to early, you'll have a latex mess everywhere. Interesting!!!! You can eat the seeds too but you have to bake them first. I am very excited. As soon as I open, I will be sure and let you know. If anyone has any tips about cooking this fruit, I would greatly appreciate it.

Banana Oat Breakfast Shake

This is a great way to get your oats in if you do not like oatmeal. Your bananas too if you do not like them. It's really easy to whip up too. You will need a blender for this and it's worth it if you do not have one. This is one serving and super filling.

You will also need: 
1 speckled banana (if you use a banana that is not speckled and still a little green, this will not work. You shouldn't be eating those anyway)
3/4 quick oats
1 to 1 1/2 cups of your favorite plant based milk depending on how thick you like it
1/2 tsp cinnamon
1/2 tsp vanilla
you can add ice if you like, just use less milk
Blend away and enjoy.

Chickpea Tacos

One of my favorite omni meals was homemade taco's. I recently decided to try chickpea taco's. Man am I glad I did. These are fantastic and kids will love them too. Super easy to make too. Now, since I have given up consuming animals, I have been struggling to find a good alternative to moo moo. There are many options to a meat alternatives but ground up chickpeas
for taco meat are amazing. Chickpeas are super healthy too. There is 15 grams of protein in 1 cup. Among other health benefits, they are a great fiber source too.

This is my recipe but you can adjust however you like.
2 cups of chickpeas
3 - 4 tbsp of organic taco seasoning
water
romaine leaves or lettuce of your choice
chopped tomato
and whatever else you like on your tacos

In a food processor add the chickpeas and seasoning. Pulse till crumbly. Do not over pulse or it will ruin the texture. Add this mixture to a heated frying pan and add a tbsp of water at a time to moisten the seasoning. Do not add too much or the chickpeas will become pasty.

Once heated, fill up your lettuce leave and add your favorite toppings. Enjoy.

Homemade Laundry Soap

Did you know most laundry detergent and fabric softeners are toxic? Laundry detergent contains carcinogens that have been known to cause at least the following. Brain toxicity, nervous system issues, liver and kidney disease, hormone disruption, immunity malfunctions and respitory failure. Fabric softeners and sheets also have carcinogens that have been linked to cancer and other health issues. So why do people keep using them????!!!! I stopped using fabric softener about three years ago and now and I can't stand the smell of it on anyone. Makes me gag like they sprayed to much perfume on themselves. I also started making my own laundry detergent which is way better for everyone all around including the earth. Here is an easy recipe that I got from a friend of mine #It'sjustAngie who also uses it. It is way less expensive too. You only need 1 - 2 tablespoons per load of laundry. It lasts a long time and is said to work great with HE washers. I personally do not know about the HE washers because I do not have one.

One or two bars of your favorite laundry soap. I've used Zote and loved it. I've used Fels Napta and really didn't care for it. I will be using #Dr.Bronner's bar soap next. If you use Zote, you will only need one bar. Anything else you will probably need two bars.

Here's the recipe:
1 4lb 12 oz box of Borax
1 3lb 7oz box of Arm & Hammer Super Washing Soda
1 4lb box of Arm & Hammer Baking Soda
1 3lb container of Oxyclean
1 or 2 bars of your favorite laundry bars
1 large glass container to store it in

The hardest part about the entire recipe is grating the soap. Find a grater that you will always use for your soap and mark it soap so you will have it for only that purpose. Grate the soap in a large container and mix everything above.

Everything should cost you less than $30 and your new detergent should last 6 months to a year depending on how big or small your family is.

Eggplant Sandwich

Like eggplant, try this sandwich. It's delicious. It's not my idea though. I got it from the Edgy Veg who I love. I used regular bread, no peppers, no cheese and I used pizza sauce.
