Vegan Chickenless Scallopini

This recipe is really good. My 13 year old daughter even likes it. The Gardein Crispy Tenders are surprisingly yummy and go great with the lemon sauce. This might be a great recipe for someone transitioning to a plant based life style as well. This will feed two to three people depending on how hungry you are.

Here is what you will need.

1 pkg. Gardein Crispy Tenders
1 16 oz. pkg. of organic pasta
2 tbsps vegan butter (I use Earth Balance)
2 tbsps organic flour
2 - 3 cups vegetable broth (depending on how thick and lemony you like it)
juice of 1 lemon
salt and pepper to taste

Prepare crispy tenders and pasta as directed on the package.

The sauce:
In a sauce or frying pan melt the butter over medium heat. Once it's melted, add the flour. Stir and cook for about three minutes. You need to make sure the flour is cooked. It will look lumpy but that's ok. Slowly add the vegetable broth a little at a time while constantly stirring to avoid lumps. Then add the lemon juice and salt and pepper to taste.

To plate, put some pasta on a plate, add some crispy tenders and the lemon sauce and enjoy.
